Introduction

Your Trusted Hospitality Staffing Partner

Running a hospitality operation โ€” whether you're managing a Michelin-starred restaurant, a busy hotel, or planning a large-scale corporate event โ€” means one thing's always true: you're only as strong as your back-of-house team. That's where Team RAL comes in.

We're a specialist catering staff agency and hospitality recruitment firm that's spent over a decade helping venues, hotels, catering companies, and event planners across London find qualified, reliable temporary catering assistants and kitchen porters. Honestly, we've done this thousands of times. No unnecessary red tape, no vague promises โ€” just the right people, ready to work, often on the same day.

This guide was written specifically for hiring managers, operations directors, and event coordinators who need to understand exactly how temporary hospitality staffing works, what roles exist, what they cost, and most importantly โ€” how to get someone through your kitchen door fast, without cutting corners on quality or compliance.

If you've ever had last-minute staff drop out, or found yourself short on catering support during peak season, you already know the pain. This guide exists to make that problem go away.

๐Ÿ‘ฅ Who Is This Guide Written For?

โœ” Hotel & venue operations managers
โœ” Contract catering firms
โœ” Facilities & FM departments
โœ” Event & banqueting planners
โœ” Restaurant owners & chefs
โœ” Corporate event coordinators

Understanding the Roles

Catering Assistants vs. Kitchen Porters โ€” Key Differences

A lot of hiring managers use these terms interchangeably, but they're genuinely distinct roles with different responsibilities, skill sets, and day-to-day workflows. Getting this right from the start means you book the right person for the right job, and your operation runs without hiccups.

Role A

๐Ÿฝ๏ธ Catering Assistants

Front-of-House & Food Service Support

Catering assistants are the backbone of any smooth food service operation. They work flexibly across front-of-house and back-of-house environments, supporting both kitchen and guest-facing functions. Think of them as the bridge between your kitchen team and your diners.

๐Ÿฅ— Food Prep Support Preparing cold dishes, garnishes, salads, and buffet items under the direction of head chef or kitchen manager. Speed and neatness matter here.
๐Ÿ”„ Buffet & Service Support Running hot and cold dishes to service areas, refilling stations and keeping things flowing during service. You need someone reliable here.
๐Ÿฅ‚ Guest-Facing Service Serving at buffets, corporate events, galas and weddings. They represent your brand โ€” professionalism and attention to detail required.
โœจ Table Clearing & Reset Clearing plates and resetting tables between sittings. Maintaining the presentation standards your venue demands, every single time.

๐Ÿ’ก Catering assistants typically have experience in fast-paced hospitality environments. They're comfortable on their feet for 8+ hours and work well under pressure.

Role B

๐Ÿ”ช Kitchen Porters (KPs)

Back-of-House Essential Operations

Kitchen porters are the unsung heroes of any commercial kitchen. Without a reliable KP, even the most talented chef grinds to a halt. There's no way around it โ€” you need dependable back-of-house support. Here's what our KPs handle daily:

๐Ÿซง High-Volume Dishwashing Running the pot wash machine, washing pans, crockery and cutlery. Keeping the kitchen stocked with clean equipment at all times.
๐Ÿ—‘๏ธ Waste Management Managing waste streams, handling recycling, and keeping disposal areas clean and compliant with environmental health standards.
๐Ÿงน Deep Kitchen Cleaning Sanitising work surfaces, cleaning floors, and maintaining food prep areas. Environmental health compliance is non-negotiable here.
๐Ÿ“ฆ Stock & Delivery Handling Receiving and storing food and non-food items. Following FIFO (first in, first out) principles and keeping inventory organised.

๐Ÿ’ก Kitchen porters typically thrive in physical, fast-paced environments. They're detail-oriented, work independently, and understand food safety basics. Stamina matters.

Section IV

The Hiring Process

How Team RAL Gets You Staffed โ€” Step by Step

Our process is streamlined and transparent. Here's exactly what happens when you contact us to hire catering staff or kitchen porters:

1

Contact & Initial Brief

Call us or complete our online form with your requirements: number of staff needed, role, date, venue location, any specific requirements (experience level, certifications, etc.). Be as detailed as possible โ€” it helps us match the right person.

2

Candidate Matching & Offer

Our team searches our database of vetted, available candidates. We consider experience, location, availability, and your specific needs. Within 1-2 hours, we present shortlisted candidates with their CVs, references, and availability.

3

You Confirm & We Confirm with Candidate

You select your preferred candidate(s). We immediately contact them to confirm acceptance, discuss final details (uniform, parking, specific kitchen equipment, etc.), and ensure they understand the brief.

4

Pre-Work Communication

We send the candidate your venue address, contact details, start time, dress code, parking info, and any site-specific safety inductions they need. We also ask you to confirm you've received them and are ready to go.

5

Staff Arrival & Induction

Candidate arrives on time, introduces themselves to your team, and completes your standard induction (health & safety briefing, kitchen-specific protocols, etc.). They're ready to work within 10-15 minutes typically.

6

Work & Feedback

Your staff member works their shift. Afterwards, we get feedback from you on performance, punctuality, professionalism, and attitude. This information informs future placements and helps us improve.

โฐ Timeline: From first contact to candidate start time, you're typically looking at 2-4 hours on the same day. For more planned assignments (events 2+ weeks out), we can take our time to ensure perfect matching.

Employer FAQs

Frequently Asked Questions from Hiring Managers

โ“ How quickly can Team RAL supply staff?

For same-day placements, we aim to confirm availability and brief candidates within 1-2 hours of your call. If you're requesting evening cover, give us as much notice as possible. For planned events or longer-term assignments (1+ weeks notice), we have even more flexibility and can carefully match candidates to your specific venue culture and requirements.

โ“ What if a candidate doesn't show up or underperforms?

No-shows are incredibly rare (our rate is under 2%), but if it happens, we immediately offer a replacement. If performance is below standard, we investigate โ€” sometimes it's a venue-specific issue, sometimes it's the candidate. Either way, we get you a better match for your next shift. We won't charge you for a shift where the candidate was genuinely unsuitable.

โ“ Do you offer long-term or permanent placement?

Yes. We primarily focus on temporary and flexible staffing, but if you find someone through us you'd like to hire permanently, we can facilitate that. We charge a placement fee (typically 15-20% of annual salary for permanent roles), but you get a tried-and-tested member of staff who you already know performs well.

โ“ What's your cancellation policy?

Cancel up to 24 hours before a shift with no charge. Within 24 hours, we charge 50% of the agreed rate (since we've turned away other bookings for that candidate). If the candidate cancels, you pay nothing. If you cancel on the day of a shift and we can't redeploy them elsewhere, you cover the candidate's cancellation fee.

โ“ Do I need to pay for uniforms, equipment, or training?

No. Our candidates arrive ready to work. That said, if your venue has specific uniform requirements (branded apron, chef coat, etc.), you should provide them or confirm dress code in advance. We assume standard black trousers and white shirt for catering assistants, unless told otherwise. Team RAL covers any basic equipment they'll need (gloves, apron, if they don't have their own).

โ“ Can I request the same candidate for repeat shifts?

Absolutely. If you find someone who works brilliantly for you, let us know and we'll prioritise them for your future bookings. Our system tracks which candidates work best for which venues, so we learn your preferences. That's part of building a reliable, consistent supply of staff.

โ“ Are your staff insured?

Yes. Team RAL carries full public liability and professional indemnity insurance. Your venue is covered in the unlikely event of an accident or injury involving one of our staff. We also expect you to carry your standard workplace insurance.

โ“ How do I pay Team RAL?

We invoice weekly or monthly, depending on your preference. Payment terms are typically NET 14 or NET 30 for established clients. For new clients, we may request payment upfront or within 48 hours of shift completion. We accept bank transfers, card payments, and some clients use payroll deductions. Ask us about the best option for your business.
